Corn Avocado Salad Recipe




Corn Avocado Salad Recipe is a refreshing salad recipe that can also be serve as an appetizer with the tortilla chips.



Ingredients

Corn sweet yellow raw  2 cup
Fresh basil  ⅓ cup leaves, whole
Tomatoes  2 cup, chopped or sliced
Avocados  1 avocado, NS as to Florida or California
Kosher salt  ¼ tsp
Cashew nuts  2 oz
Olive oil  ¼ cup
Apple cider vinegar  2 tbsp
Mustard  1 tsp
Black pepper  1 tsp, ground



Preparation method

1.Peel the avocado and then cut into small cubes; chop the cashews. Put together the avocado, tomatoes, basil leaves, corn, salt, cashews and black pepper (I prefer freshly ground pepper). In another bowl; beat together the vinegar, mustard and oil until thickens.


2.Now ladle the dressing over the salad and toss them well. Let refrigerate for 1 hour to develop the flavor. Serve Corn Avocado Salad Recipe chill.
