Ingredients

Coconut milk - 2 cups
Onion ( big ) - 1
Tomato - 1
Mushroom ( cut finely ) - 1 cup
Bamboo shoots ( cut finely ) - 1/2 cup
Baby corn ( cut into small piecs ) - 1/2 cup
Bean sprouts - 1/2 cup
Water chestnut ( cut into slices ) - 1/2 cup
Green chilli - 2
Lemon grass - 3 stalks
Galangal - a small piece
Lime juice - 1/4 cup
Soy sauce - 1/4 cup
Peppercorns - 2 tsp
Coriander leaves ( cut finely ) - 1/4 cup
Sugar - 3 tsp
Salt - as needed
Oil - as needed
 
Method

1. Cut onion, tomato, galangal, green chilli, finely.
2. Boil coconut milk with 3 cups of water in a pan.
3. Add lemongrass, galangal, green chilli, sugar, peppercorns , salt and cook.
4. Heat oil in a frying pan.
5. Add onion, tomato, mushroom, bamboo shoots, babycorn, waterchestnut, fry for a few minutes and add to the coconut milk.
6.Let contents boil for a few minutes and switch off the stove.
7. Add bean sprouts, lime juice, soy sauce, mix well and serve
