  3. Add the vegetables, mix well, cover and roast for 20-30 minutes until the vegetables are soft. Stir frequently to prevent burning.
  4. Season with salt and serve

Ingredients

  • 1 small marrow, cubed
  • 1 tomato, cubed  
  • 1/2 stick celery, sliced  
  • 1/2 onion, chopped
  • 1/8 cabbage
  • 1 bay leaf
  • 1 1/4 l vegetable stock
  • oregano
  • salt, freshly ground black pepper

Steps

  1. Bring the vegetable stock to boil, add the vegetables and bay leaf and cook for about 10-15 minutes until the vegetables are just soft.

Ingredients

  • 200 g whole wheat pasta
  • 4 tbsp. canola oil
  • 3 red chili, chopped

  • 80 g cashew nuts
  • 2 red and 1 yellow pepper, thinly sliced
  • 150 g green beans  
  • 1 tin corn

Steps

  1. Cook the pasta in boiling water according to the instructions on the packet.
  2. Heat the oil in a large pan, fry the onions and chili for about 3 minutes, occasionally stirring. Add the cashews and fry for another minute. Add pepper and beans and stir-fry for 5-10 minutes until the vegetables are just soft. Then add the corn, mix everything well and allow the corn to heat up.

I sometimes hear from people who are trying to be very compliant with the guidelines of the lean and green meal on Medifast. They understand that they are supposed to have lean protein and three servings of vegetables, but they want to make sure that they aren't taking in too many calories. While they certainly want to enjoy their main meal and ensure that they get enough to eat, they don't want to negate all of the work that they have done throughout the day.

I recently heard from someone who asked me "how many calories are you supposed to be on your lean and green meal? I'm pretty good with my prepackaged meals throughout the day, but I don't want to blow it and then have too many calories for dinner when I make my lean and green meal, but I can't find any guidelines about how many calories the main meal should be."

Admittedly, there isn't a lot of concrete information about the caloric content of the lean and green. This is probably because the company has no way of knowing which of the over 70 prepackaged meal choices you would have already consumed throughout the day. But, you can figure this out using simple math. The caloric guidelines of Medifast call for taking in between 1,000 - 1200 calories per day. And, they ask you to eat five of the Medifast prepackaged meals (that they provide) in addition to your daily lean and green that you make yourself. I use the term "make" very loosely because plenty of people meet this requirement with restaurant or frozen meals.

So, considering that you're going to be eating five of those prepackaged meals and that the caloric content of the same is anywhere from 90 - 110 this puts the average or median at 100 calories. (I'm just using the average to make things easy, but depending on which meals you chose, your caloric intake will vary slightly.) When you multiply this 100 calorie average by those five prepackaged meals, you come up with around 500 - 700 calories that you have left. Remember that the target you are trying to hit is 1000 - 1200 calories per day. So, to make things simple, let's split that right down the middle and call it 1100. In the example above, this leaves you with an average of 600 calories for your lean and green meal, which is pretty generous.

Of course, these are just estimates, but they are estimates that I think are pretty close to what most people take in. However, I actually believe that the ratio of carbohydrates to protein is every bit as important as the caloric content. You'll notice that all of the Medifast meals have relatively high amounts of protein and low amounts of sugar and carbohydrates. They don't want you just eating foods that are low in calories but that are also nutritionally deficient. They want you eating enough protein and fresh non starchy vegetables, which is why they publish very clear guidelines and offer free counseling should you have any questions about your lean and green.

I hope I've helped you determine the target number of calories for your lean and green meal, but don't forget the protein to carbohydrate ratio. There are a lot of good recipes available that make your lean and green meal pretty easy to achieve.

When I was asked to take part in a special holiday YouTubeplaylist called, “Christmas Morning Breakfast,” I started thinking aboutseasonal variation on things like eggs benedict, quiche, and French toast. Butthen I realized…you can’t wrap those things up and give them as an edible gift,so I decided to do this granola instead.

We’ve covered the edible gift topic before, and discussedthe fine line between, “Wow, what a creative and thoughtful gift!” and “Wow,what a cheapskate!” Happily, when it comes to this delicious, crunchy treat,one taste and the lucky recipient will forget about any ulterior economicmotivations.
Since this was a Christmas-themed recipe, I went with lotsof festively colored dried fruit, but the beauty of the granola technique isthat it pretty much works with anything. I love the looks of the green pumpkinseeds, but things like hazelnuts and pecans would also work wonderfully.
As I mentioned in the video, it’s really up to you todetermine the cooking time. I tend to like mine just golden-brown, but manyenjoy the deeper, nuttier flavor of a longer roasting. Since you are pullingand tossing every 10 minutes, this is pretty easy to monitor, but just becareful towards the end, as it can get bitter if you go too far.
Anyway, whether this is for a quick and easy holidaybreakfast, with milk or over Greek yogurt; or you are going to package some upas a stocking stuffer for the foodies in your life, I hope you give this a trysoon. Enjoy!

Ingredients for about 6 cups of Granola3 cups rolled oats
1 cup sliced almonds
1/2 cup raw pumpkin seeds
1/2 cup shredded coconut (pure coconut, not candied)3/4 cup packed brown sugar

I’ve always wondered why Cumberland sauce wasn’t morepopular around the holidays. It’s such a delicious and versatile condiment, andjust as easy and fast to make as any cranberry sauce out there.  Maybe it’s the name?

Cumberland sauce sounds more like something that the Queenwould be spooning over a Quail en Croute than it does Uncle Charlie over aslice of ham. However, despite this sassy sauce’s upper-crusty sounding name,it’s actually quite rustic.
My “Black Cumberland” version uses black currants instead ofthe traditional red, and also includes some very browned-blackened onions, butlike all similar recipes, this begs for even further adaptation depending onthe meat. Maybe a little mint for lamb, or a touch of cardamom for that smokedduck breast?
Notwithstanding any flavor variations, you will still needto decide whether to serve hot or not. I definitely prefer the thick, shinycooled-down version as shown, but happily, there’s no wrong choice. I hope yougive this extra special holiday sauce a try soon. Enjoy!

Are you familiar with those cute new commercials by Ragù about the Long Days of Childhood? Personally they just crack me up! My husband and I always joke around when watching our kids from time to time, how incredibly difficult it must be to be a 2 and a 5 year old these days.  Lol!  These commercials capture just that. So I love when I catch a new one on television- can totally relate. Well they have now taken it a step further and have developed a new app called the 'Give 'Em Ragu' app. You get to upload photographs and videos of your own children and then the app will put them to music to describe their very own "Long Day of Childhood". How cool is that? What kid doesn't like to see their face on video, let along a music video?! After creating your video you can then share it with all of your friends and family; it can even upload right onto Facebook!

When I heard about this app I was thrilled to play around with it to create one for my boys. A nice feature I found was that you can use pictures from Facebook, Instagram or your computer, giving you tons of options. It was really fun to play around with, adding silly pictures and then watching the looks on the faces and hearing the giggles from my two boys. The app itself couldn't be any easier, you select up to seven pictures, rearrange them, write a little snippet describing your photo story and that's it! Hit send and Ragù pits together your own little commercial featuring your kids with a song and a story to match.  They really are quite funny.

Pros: this was a fun app and a great way to share memories of you family in a fun new way. Plus it is super easy to do!

Cons: I had issues with the app for my itouch and it kept shutting down before I could save it.  I am hoping to share my own movie with you all later if i can get the kink ironed out.  Other goofy thing is that it was hard to get the image focused and centered on my sons face. It did some odd cut outs and edits, but hey, it is a free app!  I can live with it.  I still think it is a worth playing around with.  I had a lot of fun with it!

I always thought Patatas Bravas meant “brave potatoes,”which seemed a little strange since what was supposed to be so brave aboutthem? Amazingly delicious, yes, but valiant, fearless or courageous? I don’tthink so. Well, apparently my translation skills were lacking, and come to findout it actually means “fierce.” Now that makes sense.

As advertised, these are fiercely textured, fiercelyflavored, fiercely presented, and fiercely enjoyed. How fierce is really up toyou and your inner Spaniard. There are as many patatas bravas recipes as homesin Spain, and this is nothing more than my latest rendition. 

As long as you boil themfirst, fry crisp, and season earnestly, the rest is open to wildexperimentation. I’ve used all sort of blanching liquids, spice blends, andsauces, and never been disappointed.
My control around food is generally decent, but I am nomatch for a plate of these. Once you start with the toothpick, you’ll beimpaling and eating potatoes until they’re gone. If you are making these for agroup, just do in batches and keep warm in the oven until you have enough. Justdon’t salt until the last second, or they can get soggy. I hope you give thesea try soon. There are few foods I enjoy eating more than a plate of crispy-edged potato pancakes. Unfortunately, I've been trying to limit my carbs lately (I just can't let go of my dream to become a famous underwear model), so seeing all these amazing Latkes recipes that pop up during Hanukkah is really hard.

Anyway, just because I'm not partaking doesn't mean you have to deny yourself this exquisite pleasure. Below you'll see my version, which has always received rave reviews. These are garnished with smoked salmon, but my favorite way is to simply enjoy them topped with applesauce and sour cream. Twice Baked Potatoes - They Take Longer, But At Least They’re More Complicated

I don’t do a lot of things in the kitchen purely foresthetic reasons, but these twice baked potatoes are one of my more beautifulexceptions to that rule. You can get almost the exact same flavors by justadding stuff to a regular baked potato, but what you won’t get in thatscenario is the impressive, over-stuffed height, and gorgeous, golden-brownedcrust seen here.

Is it worth it? Only you can answer that. For me, once in awhile, for those extra fancy dinners, the answer is a resounding yes. Taste is,and always will be, the most important aspect of cooking, but when entertainingguests on special occasions, don’t forget that you’re putting on ashow with the food. And when it comes to starchy side dishes, this is a greatway to express that flair for the dramatic.
Like I said in the video, this is a demonstration oftechnique, and not necessarily a recipe I want you to follow verbatim. I willlist what I used below, since I’m required to by food blogger common law, but if there was ever arecipe that you’d want to experiment with, this is the one.
By the way, since there's a certain amount of prep involvedhere, you can make these ahead of time, up to the point of the second baking,and then just finish when it gets closer to service. I hope you give this showstopping side dish a try soon. Enjoy!

Sure they did. This seems very exaggerated, but no matterhow they got the “whoopie” part, at least the rest of the name is not accurateeither. That’s right, not only is this cookie not a pie, this pie isn’t even acookie…it’s really a little cake. Confused? Me too, and I just wrote that.
Anyway, despite the dubious name, and the other dubiousname, at least the gingerbread part is accurate. Although, now that I thinkabout it, it’s not really a ”bread”…okay, this has to stop. With holiday cookieexchanges in full swing, the only thing I can say with certainty is that thesewhatever-they-are’s were very delicious, fun to make, and I hope you give thema try soon. Enjoy!

Apparently Size Doesn’t Matter for Prime Rib "Method X"

This is what our 6-pounder looked like. Would a
20 pounder work as well? Spoiler Alert: Yes.
The most common question after we posted our now famous“Method X” for making perfect prime rib was “will this work with much bigger,full-size roasts?” Since I'd only used the method on smaller specimens, I washesitant to green-light much larger pieces of beef without having tested itmyself.

Well, thanks to Bill in Salt Lake City, we now have visualproof that this great technique does work on the big boys. Here’s what thefearless cook had to say:

“Your recipe does indeed work on larger bone-in prime rib roasts. I followed the recipe to the tee, onthree 18 to 21 lb. roasts using three different ovens in three separate skicondo ovens, all with different thermostats. All came out perfectly. I had 29very pleased snowmobilers!”
As everyone knows, there are few groups harder to pleasethan a bunch of starving, probably drunk snowmobilers, so this must have really beenamazing.
